Shun Kitchen Knives

Kershaw KAI Cutlery is manufacturer of Shun Kitchen knives also known as Kershaw knives as well. Offering licensed products approved by the National Sanitation Foundation.  These are Japanese kitchen cutlery products with a classical European shape with double level edge. Forged steel was a classic style adopted by German and was considered high quality but with the growing demand, that process worked no longer and new technology aroused. Roll stock, best technology vacuum packaging by heating 32 layers of the steel that makes complete and perfect molecular structure. By compressing roll stock sheet, dents on the sheet will leave small waves on the surface of the sheet on both sides. This step was most popular among Japanese knife maker as Kasumi style and known as Damascus process. Wootz Damascus and Pattern Damascus are two types. Initially Wootz Damascus was introduced; while using steel with special mines (iron oar combined with tungsten and vanadium), makes the steel harder and toughest but flexible. Pattern Damascus was discovered in Europe; this way different metal are folded together. Damascus folded with different layers and effects of reactive and non reactive metal resultant to finished roll rock.

This pattern Damascus procedure is used for making Shun knives. Damascus steel with 32 layers on both edges forged from cobalt, molybdenum, and vanadium combination makes it extremely sharp. These knives are available in market with the specification of its sharpness and hard tool.

Shun Classic Knives:

VG-10 stainless steel with high density is used for Shun classic, highly polished and smooth edge gives magical result. Fully forged Damascus layers knives are high carbon stainless steel alloys are rust resistant, D-shaped handle is smaller and stable similar to Asian design. Pakka wood is a thin layer of white birch that is dried off for making handles. These wood layers and some other layers of plastic resin are combined up together and this thick sheet tempered under pressure. This complete varnished process is very durable for long lasted knives. Stainless steel bolster keep it safer and easy to grasp. Magnetic knife strip is very elegant for your complete kitchen and storage purpose.

Shun Ken Onion knives

Ken introduced these knives, who made a lot of search on professionals how they handle their knives and made ergonomic knives that are very comfortable and control balance, extended bolster over the spine of the knife with inner curve on each sides, downward curved handle is very comfortable for small hands. Curved blade with extended glide of the blade across the cutting board makes it unique.

Shun Steel

Fully forged Damascus layers high carbon stainless steel alloys, D-shaped stainless steel handle makes it less costly than Classic shun because it’s finishing is easier than wood.

Shun Pro & Shun Pro II:

These types of blades are commonly used by professional Japanese Chefs. These are single sided knives; sharp curved edge with hollow ground back is very efficient for effortless cutting. It may not give a quick slicing but smooth and clean cuts.
